Liberica: The Rarest Coffee You’ve Never Heard Of (And Why We Had to Bring It to Canada)
You’ve heard of Arabica. You may have heard of Robusta. But there’s a third species of coffee out there — one that accounts for less than 2% of global production, grows on trees that can reach nine metres tall, and produces a cup so distinct that even lifelong coffee drinkers do a double take on the first sip.
It’s called Liberica. And we’ve just brought it to Canada.

What Even Is Liberica?
Liberica (Coffea liberica) is one of the oldest cultivated coffee species in the world, originally from West Africa and widely grown across Southeast Asia. It was actually the dominant global coffee crop in the late 1800s, after a devastating leaf rust disease wiped out most of the world’s Arabica plants and farmers scrambled to find a hardy replacement.
Arabica eventually recovered and reclaimed its throne, and Liberica faded into the background — kept alive mainly by farming communities in the Philippines, Malaysia, and pockets of Vietnam who never stopped growing it.
Today, it’s extraordinarily rare. Most specialty roasters in North America have never worked with it. Which is exactly what drew us to it.
What Makes It Different?

The Liberica plant itself is enormous compared to Arabica and Robusta — a full-grown tree, not a shrub. Its cherries are larger and asymmetrical, and the beans inside have an irregular, almost lopsided shape that makes them instantly recognisable.
But the real difference is in the cup. Liberica has a flavour profile unlike anything in mainstream coffee culture. Where Arabica tends toward brightness and acidity, and Robusta toward boldness and caffeine, Liberica occupies its own territory entirely: floral, fruity, and complex, with a distinctive sweetness that lingers long after the sip.
Ours, in particular, opens with floral and tropical fruit notes before settling into a deep, rich molasses sweetness on the finish. Light roasted and naturally processed, it’s one of the most layered and surprising cups we’ve ever produced.
Where Ours Comes From
Our Liberica is grown in Hướng Phùng, a quiet farming community in Quảng Trị province in central Vietnam — a region better known for its wartime history than its coffee. At 680 metres elevation, the growing conditions here are cooler and more temperate than Vietnam’s southern highlands, giving the beans a slower ripening process and a more nuanced flavour development.
The farmers in Hướng Phùng have been tending Liberica trees for generations — long before it became a specialty curiosity in the West. For them, it’s simply the coffee that grows here. For us, it’s one of the most exciting origins we’ve ever sourced.
After harvest, the cherries are naturally processed — dried whole in the sun over several weeks, allowing the fruit’s sugars to slowly absorb into the bean. It’s a slower, more labour-intensive method, but it’s what gives our Liberica that signature fruity sweetness.
How to Brew It
Because Liberica is light roasted and naturally processed, it rewards brewing methods that highlight clarity and sweetness rather than mask them.
We recommend:
● Pour over — the best way to experience the full floral and fruity complexity. Use water around 90–92°C and a medium-coarse grind.
● Phin filter — a nod to its Vietnamese roots. Slower and more concentrated, it draws out the molasses sweetness beautifully.
● Aeropress — if you want a cleaner, more controlled brew that highlights the fruity notes without any bitterness.
We’d steer away from dark roast brewing methods or very high temperatures — this bean is delicate and expressive, and it deserves a gentle hand.
Why We Brought It to Canada
At Yellowcouch, we’ve always believed that Vietnamese coffee deserves a bigger spotlight. Most of the world knows Vietnam as a mass producer of commodity coffee — beans that quietly disappear into blends without credit or recognition.
Liberica is the most extreme version of that story. Here is a coffee species with a centuries-long history, grown by dedicated farming families in the hills of central Vietnam, producing a cup that is genuinely unlike anything else in the world — and almost nobody outside Southeast Asia knows it exists.
That’s a story worth telling. And a cup worth trying.
